Ingredients

Peppermint Yellow Cake

  • 2 1/4 cup all purpose flour sifted
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 1/2 tsp baking powder
  • 2 eggs
  • 1 3/4 cup granulated sugar
  • 1 cup butter
  • 2 tsp Nature's Flavors Peppermint Extract -- the link to purchase this extract can be found under 'Instructions'
  • 1 cup milk
  • 1/2 cup sour cream

Peppermint Brownies

  • 1 cup flour sifted
  • 3/4 cup cocoa powder sifted
  • 1 tsp salt
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 3 eggs
  • 1 cup butter melted
  • 2 tsp Nature's Flavors Peppermint Extract -- the link to purchase this extract can be found under 'Instructions'
  • 1 tbsp coffee
  • 1 cup dark chocolate chunks

Filling and Toppings

  • 1 packet instant vanilla pudding 153 g
  • 2 packets instant chocolate mousse 174 g
  • Full or Crushed Peppermint Candy Cane

Instructions

Peppermint Yellow Cake

  • In a medium bowl, mix the flour, salt, baking soda and baking powder. Set aside.
  • In a separate bowl fitted with a whisk attachment, beat the butter and sugar until smooth and creamy. Ddd in the eggs one at a time and continue to beat until combined. Then, beat in the sour cream.
  • Next, mix in the Nature's Flavors Peppermint Extract.

  • Then, beat in quarter of the the flour mixture followed by a quarter of the milk into the egg mixture. Repeat this step until the remaining flour and milk has been incorporated. Do not overbeat the mixture.
  • Preheat oven to 350° F. Pour the cake batter into a 9-by-13 inch sheet cake pan lined with parchment. Bake the cake for 35 to 40 minutes until a tooth pick inserted comes out clean.

Peppermint Brownies

  • In a medium bowl, mix the flour, cocoa and salt.
  • In a separate large bowl, whisk the granulated sugar, brown sugar, eggs, melted butter and coffee.
  • Next, add in the Nature's Flavors Peppermint Extract and continue whisking.

  • Fold in the flour mixture into the egg mixture until incorporated well. Then, fold in the dark chocolate chunks.
  • Preheat the oven to 350° F. Pour the brownie batter into a 9-by-9 inch square pan lined with parchment. Bake for 30 minutes until a tooth pick inserted comes out clean.

Pudding and Mousse

  • Follow packet instructions and prepare the Vanilla Pudding and Chocolate Mousse

Assemble the Trifle

  • Cut the Peppermint Brownie slab into 12 even sized squares. Cut the Peppermint Yellow Cake into 20 squares
  • Trifle Layer 1: Arrange Peppermint Brownie squares and Peppermint Yellow Cake squares against the wall of the Trifle bowl, alternating between the two (scroll up to see the Trifle image in this post). Fill up the middle of the Trifle with Peppermint Yellow Cake squares.
    Trifle Layer 2: Spoon the prepared vanilla pudding over the Brownie-Cake Layer and smoothen with a spatula.
    Trifle Layer 3: Repeat steps followed to assemble Layer 1. Follow the checker board style for added aesthetics (scroll up to see the Trifle image in this post).
    Trifle Layer 4: Spoon the prepared chocolate mousse over the Brownie-Cake Layer and smoothen with a spatula.
  • Cut any of the remaining Peppermint Brownie squares into smaller chunks. Top the Trifle with these chunks along with full or crushed candy cane.
  • If not serving right away, refrigerate the Trifle.
