Graham Cracker Crust
- 2 1/2 cup Whole Grain Graham Cracker Crumbs
- 13 tbsp Melted Butter
- 1/4 cup Granulated Sugar
- 1/4 tsp Salt
Brownie
- 1/2 cup + 2 tbsp Chia Oatmeal (By Pinole Project)
- 1 1/2 cups Cocoa Powder
- 1 cup Brown Sugar
- 1/4 tsp Salt
- 3/4 cup Olive Oil
- 2/3 cup Table Syrup
- 1/2 cup Peanut Butter Both Crunchy & Smooth Work
- 4 Eggs
Toppings
- 1/4 cup Chocolate Chips Melted
- 1 cup Mini Marshmallows
Make the Crust
Prepare a 7.5 inch by 7.5 inch square pan lined with parchment paper.
Mix the graham cracker crumbs, melted butter, sugar and salt in a bowl.
Scoop the graham cracker mixture into the prepared pan and spread evenly. Use the back of a measuring cup to flatten and tighten the mixture into the pan.
Bake the crust for 14 minutes at 350 F.
Make the Brownie
In a large bowl, mix the Pinole Chia Oatmeal, cocoa powder, brown sugar and salt. Add the olive oil, table syrup and peanut butter and mix until fully combined. Add in the eggs and continue mixing until a smooth batter is reached. The batter will be slightly thick.
Pour the prepared batter onto the baked graham cracker crust.
Bake the brownie batter + crust for 30 mins at 350 F.
Remove from oven and let it cool completely.
Spread the melted chocolate over the cooled brownie followed by the marshmallows. Re-bake for 5 to 8 minutes at 350 F. Make sure to not overbake during this step.
