Mix flour, baking powder and salt in a bowl
In a separate bowl, cream the butter and sugars until fluffy, using a mixer/wooden spoon. Then, add egg and vanilla and mix
Add the flour mixture to the egg mixture and mix until combined
Cut the Mid Day Squares into chunks and add them to the flour and egg mixture. Bigger the chunks, the better. Use your hands to gently combine the chunks. Don't press too much on the dough. This will ensure the dough stays as airy as possible
Divide the cookie dough int 7 sections (if you want the same thickness as that in my photograph above. Otherwise, divide into more or less depending on how many cookies you want)
Very gently, turn each of the 7 pieces of dough into a cookie shape. Again, don't press too hard on the dough. The cookie ball doesn't have to be a perfect circle
Chill the 7 cookies (dough) for 1 hour
Bake the chilled cookie dough at 375F for 17 minutes until golden
Let cookies cool for about 10 minutes and enjoy!
