Thick Chocolate Chunk Cookies

Ingredients

  • 2 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp unsalted cold butter
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup Almond Mid Day Squares Chocolate
  • 1/2 cup Fudge Mid Day Squares Chocolate

Instructions

  • Mix flour, baking powder and salt in a bowl
  • In a separate bowl, cream the butter and sugars until fluffy, using a mixer/wooden spoon. Then, add egg and vanilla and mix
  • Add the flour mixture to the egg mixture and mix until combined

  • Use your hands to gently combine the chunks. Don't press too much on the dough. This will ensure the dough stays as airy as possible
  • Divide the cookie dough int 7 sections (if you want the same thickness as that in my photograph above. Otherwise, divide into more or less depending on how many cookies you want)
  • Very gently, turn each of the 7 pieces of dough into a cookie shape. Again, don't press too hard on the dough. The cookie ball doesn't have to be a perfect circle
  • Chill the 7 cookies (dough) for 1 hour
  • Bake the chilled cookie dough at 375F for 17 minutes until golden
  • Let cookies cool for about 10 minutes and enjoy!
